These are the most suitable for all non wood fired ovens as they attract and hold heat.
After minimal use limited / no oiling is required, and will function like a non stick pan.
Pastry cannot be left on the tray for long periods prior to baking.
Not suitable for storing pastry in the fridge.
Perforated pans ideally suited for fan forced ovens to allow heat to penetrate pastry for browning and baking.
